Cooking with mushrooms

Dried vs. fresh
The most common ways to purchase mushrooms are fresh or dried. Many people wonder if there is a difference. What is wonderful about mushrooms is that they do not lose any of their nutritional value nor their flavor, if dried. The only thing that might differ slightly is the consistency, but once incorporated into your dish you’ll never know the difference. Dried is often times a good option due to the fact that fresh mushrooms do not have a long shelf life and if you have dried on hand you can use them at your leisure.
To rehydrate dried mushrooms simply place in a bowl, cover with hot water (make sure the mushrooms remain under the water. You may have to weigh them down.) and let sit for approximately 30 minutes. Squeeze out the excess water and they are ready to use. But wait! Don’t throw that soaking water away. It makes a delicious broth for gravies or soups. If you are not ready to use it simply place in the freezer for future use.
